Description – This Apprenticeship is suitable for anyone either in full-time employment, or progressing from a Level 1 or those who are able to start a qualification at Level 2. Apprenticeships are assessed within the workplace; for each unit, your assessor observe watch and ask questions as you perform a task, or look at your portfolio work as formal evidence of your learning. Set assignments for each unit and mandatory tests are given as part of the Apprenticeship.

This certificate aims to meet the needs of learners who work or want to work within food preparation and cooking. It provides broad coverage of the requirements of staff working within this job role of the hospitality industry and covers units such as, working effectively as part of a team, preparing a range of different foods and maintaining food safety.

Description – The NVQs are suitable for anyone either in full-time employment, or progressing from a Level 1 or those who are able to start a qualification at Level 2. Description – This NVQ Level 3 Diploma aims to meet the needs of candidates who work or want to work in professional cookery and provides broad coverage of the requirements of staff working within this job role of the hospitality industry. It also provides valuable accreditation of skills and knowledge for candidates, without requiring or proving occupational competence. Set assignments for each unit and mandatory tests are given as part of the Apprenticeship.

Content – The qualification includes the following mandatory units:

  • Develop productive working relationships with colleagues
  • Maintain the health, hygiene, safety and security of the working environment
  • Maintain food safety when storing, preparing and cooking food

Optional units include:

  • Prepare, cook and finish dishes
  • Prepare complex dishes

  • Produce sauces, fillings and coatings for complex desserts

Description – This diploma is for candidates who work or want to work in a supervisory or leadership role within the hospitality sector. It will prepare learners for employment in supervision and leadership roles. It covers the makeup of the hospitality industry, communication, leading a team and supervision of customer service. Set assignments for each unit and mandatory tests are given as part of the Apprenticeship.

Content – The qualification includes the following mandatory units:

  • Lead a team to improve customer service
  • Develop productive working relationships with colleagues
  • Provide leadership for your team
  • Contribute to the control of resources
  • Maintain the health, hygiene, safety and security of the working environment.

Optional units include:

  • Supervise reception services
  • Provide learning opportunities for colleagues
  • Contribute to the development of a wine list
  • Contribute to promoting hospitality services and products.
