Poultec’s Food Centre of Excellence is home to Norfolk’s first state- of-the-art butchery training suite. Learners receive hands-on tuition from our master butcher in a range of workshops designed to give them a mix of work-based assessment and practical tutoring.

These courses are suitable for a range of people including established butchers, young people entering the industry or people considering a career in the industry. The butchery suite is also available for private hire as well as for one-to-one tuition.

Description – This qualification is designed primarily for learners in the meat and poultry industry who wish to develop intermediate skills and knowledge required to confirm occupational competence at work. The qualification provides choice in a wide range of automated or manual processing techniques or distribution, service and retail skills to confirm occupational competence in specific job roles.

Content – The qualification includes the following framework:

  • FDQ Level 2 Certificate for Proficiency in Meat and Poultry
  • Level 1 Functional Skills Maths and English
  • Personal Learning and Thinking Skills
  • Employee Rights & Responsibilities

Benefits – The successful Apprentice will have an increased knowledge or understanding of:

  • Maintaining workplace food safety standards in operations
  • Maintaining quality in food operations
  • Preparing orders for despatch
  • Reporting and recording production operations
  • Control labelling in Food Manufacturing

Duration – 12-18 months

Progression – FDQ Level 3 Certificate for Proficiency in Meat and Poultry

Description – This qualification is designed primarily for learners in the meat and poultry industry who wish to develop advanced skills and knowledge required to confirm occupational competence at work. The qualification provides choice in a wide range of control, monitoring and management of processing operations or distribution, service and retail operations to confirm occupational competence in specific job roles. It is ideal for learners who carry out routine workplace tasks and who may use this qualification as a stepping stone to larger qualifications of this type. The qualification covers mandatory skills from a wide range of areas like: controlling meat and poultry processing plant, monitoring production, management of operations, diagnosis and resolution of problems, quality testing and sampling, co-ordinating butchery service and retail operations.
